1 teaspoon thyme, 2 bay leaves, 1 tablespoon vegetable oil, 2 cups chicken or beef broth, salt and pepper to taste
Steps to make the dish:
1. Rinse and set aside the rice.
2. Puree tomatoes, bell peppers, onion, and garlic.
3. Add tomato paste, smoked paprika, thyme, and bay leaves to a big pot of vegetable oil. Stir until fragrant.
4. Add the purée and stir. Stir occasionally for 10-15 minutes until sauce thickens.
5. Toss the rice in the sauce.
6. Add broth, salt, and pepper and mix. Boil and lower heat.
7. Cover the saucepan securely and boil the rice for 20–25 minutes until cooked and the liquid is absorbed.
8. Fork-fluff and serve hot rice.
Jollof Rice, eaten with fried plantains, grilled chicken, or coleslaw, is delicious and healthful.
